Campur semua bahan dalam mixer bowl, aduk dengan kecepatan sedang selama ± 15 menit hingga adonan menjadi kalis (suhu adonan 27-28°C). Bagi adonan @ 1100 g untuk loyang tertutup, @ 400 g untuk loyang terbuka, bulat-bulatkan dan istirahatkan selama ± 20 menit. Bentuk dan masukkan ke dalam loyang tertutup 12x12x30 cm, atau loyang terbuka 10x10x22 cm. Simpan di dalam proof box dengan temperatur 35°C, RH 80% selama ± 90 menit. Panggang dalam oven panas 200°C selama ± 45 menit untuk loyang tertutup atau ± 20 menit untuk loyang terbuka.
